My Darling Husband

Today I thought I would take a few minutes and tell you about my awesome husband,Lance. He is 35 years old, and has the rough,rugged look about him. His dress is generally that of flannels, jeans, and work boots. Hoodies on occasion. Praise God, not a lot of ironing for me!! He is a rather quiet sort of guy. He prefers to observe instead of talk. I am the talker (giggle!). But they do say that opposites attract, right? Anyways, I think his quietness is his strength. It just gives me such a sense of peace. A few years ago, I was very sick. I was in the hospital, about to have surgery. My darling husband came to visit me, and was sitting in a chair next to the hospital bed. I couldn't hold a pleasant conversation. I was just too sick. He sat there totally content to say nothing, but still be with me. He was not pretending that it was ok to not talk, it really WAS ok with him. At that moment, I knew he was the one for me. He gave me such a sense of peace and comfort. I believe just like my Heavenly Father does. Yes, I know that my husband is just a man. It says in Corinthians that our marriage relationship is a symbol of Christ and the church. My husband was imitating Christ at that moment. I thank God for him everyday. He is my life, my love, my best friend. (sniff,sniff)

Tulips, Tulips, Where Are Your Heads?

I planted tulip bulbs in pots this year. I live in Washington State, so I can plant them as late as December. It is now April, and they have grown well except for no flower heads. I was just out on the deck to check on them, and I saw three red heads!!!! They are not fully open yet..... I will give them some more time. This is the season for new life. God is soooo good.

Chester-Our New Puppy!

My son Joshua is six years old, and has been asking for a puppy for about a year now. I kept promising him that we would look for one. One sunny afternoon my husband and boys we out doing yard work, and our neighbor stopped by with her beautful new little pup! We got the number of the puppy sellers......Wala! Our new family member is half blue heeler, half walker hound. His face looks more like a lab face to me, although labs do not have the colors my pup does. My boys adore him, and so does my sister and her husband. He sure does have alot of people lovin' on him! ~smile~

Recipes

Cindy's Meatloaf

2 eggs
3/4 cup milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash pepper
1-1/2 pounds lean ground beef
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce


In a large bowl, beat eggs. Add milk, saltines, onion, salt, sage, and pepper. Add beef and mix well. Shape into an 8-1/2-in.x2-1/2-in. loaf in an ungreased shallow baking pan. Combine remaining ingredients: spread 3/4 cup over meat loaf. Bake at 350degrees for 60-65 minutes or until no pink remains; drain. Let stand 10 minutes before slicing. Serve with remaining sauce. Yield: 6-8 servings ~Yummy~




Twice Baked Potatoes


4 large baking potatoes, baked
milk
1/2 cup butter
salt
pepper
1 small bunch of green onions, chopped
shredded cheddar cheese
cooked and crumbled bacon
sour cream (optional)



After you have baked your potatoes, cut potatoes in half. Scoop out insides of potatoes. Mash them, add enough milk to make creamy, add butter, salt and pepper. Using a spoon place
filling back into skins. Top with green onions, and bacon. Bake at 350 for 20-25 minutes. Take out of oven, add cheddar cheese. Bake for 5 more minutes. Serve with a dab of sour cream. Yield: 4 servings


Flaky Buttermilk Biscuits



4 cups all-purpose flour
5 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup shortening chilled
1-1/2 cups buttermilk



Adjust rack to center of oven and preheat to 425 degrees.
Sift the flour, baking powder, baking soda and salt into a large bowl. slice the chilled shortening into pieces and add to the dry ingredients. Use a fork to cut in the shortening, until the mixture resembles coarse crumbly meal. Add the buttermilk and stir with a fork until the dough just holds together (sometimes I need to add a little water to it, to make it hold) Turn the dough outonto a lightly floured surface. Knead gently for 1 minute, adding a little extra flour as necessary to incorporate all the ingredients and ensure that biscuits will rise evenly. Pat into a 1/2-inch-thick circle and let the dough rest, covered with a clean tea towel, for 10 to 12 minutes. Cut the biscuits with a 2-inch round cutter dipped in flour. Arrange them about 3/4-inch apart on an ungreased baking sheet and brush the top with a little buttermilk. Bake in the center of the oven until golden, 10 to 12 minutes. Cool the biscuits on wire racks and brush them with melted butter, if desired.

Dinner for the Lijewski Family Tonight!

Dinner for my family tonight will be : Meatloaf with a fabulous red sauce~yum~ , twice baked potatoes (with bacon, green onions, and cheddar on top), green beans, and buttermilk bisquits. I thank God every time I prepare a meal, that He provides ALL things for us. Tommorow I will be posting these recipes and some recommended reading from me. Have a great day.
